Breakfast: 3 slices of wholemeal toast with Pure soya spread and Marmite.  2 mugs of Herbal tea.

Mid-Morning: a black coffee, a banana, a handful of raisins

Lunch: Sandwich made from 2 slices of wholemeal bread with houmous and slices of ‘Tofu Rosso’ left over from yesterday’s dinner, 500ml fairtrade apple juice drink, packet of Walker’s Salt N Vinegar crisps.

When I got in (hungry after cycling from work to an appointment and then home): A slice of rye bread with tahini and nori strips.

Dinner: some ready-made vegan ‘sausages’ (from Tai’fun Tofu – called ‘Sombreros’ – not bad!) with mashed swede and pickled red cabbage.  A pudding made from 2 x Alpro dark chocolate flavour soya desserts mixed with toasted museli (mmmmmmm!)

Herbal tea.

Friday 15th February

Breakfast: a banana, an apple, some black tea

Lunch: a baked potato, tomatoes, lettuce, cucumber, peppers, beetroot.  Fruit: watermelon, pineapple, red grapes.  A handful of mixed nuts.  A mug of almond milk.

Dinner: Boiled rice, toasted hazelnuts, asparagus, spinach and mange tout (steamed), with a peanut sauce, followed by an Alpro soya dessert.

Saturday 16th February

Breakfast: granary toast with marmite and houmous, a kiwi fruit, tea with soya milk

Munched and nibbled during road trip:  a banana, an Alpro soya dessert, peanuts, raw mange tout peas, houmous

Mid-afternoon: a soya latte from a coffee shop

Dinner: Chinese takeaway: plain rice, tofu and vegetables in black bean sauce

Sunday 17th February

Breakfast: oatmeal with banana, kiwi, sunflower seeds, jam, milled linseed, a slice of granary toast with marmite, tea with soya milk

Mid-morning: black tea, 2 slices of Valerie’s homemade Lenten Cake (a scrumptious cake made with oil and orange juice)

Lunch: large plateful of oven roasted veg (butternut squash, potoatoes, parsnips, broccoli, cauliflower) with beluga lentils and steamed spinach, followed by tinned fruit salad, lychees and an Alpro soya dessert – caramel flavour (have nearly worked through all the flavours now…. dark chocolate definitely the best in my opinion)

Snacks: rather too much ‘Oatly’ chocolate flavoured oat milk, 2 x ‘Nak’d’ raw cherry bars.  (Oh dear…  Got a bit carried away with the Vegan snacks after an impromptu trip to a large supermarket…)

I’d eaten so much today and was feeling really full so I didn’t have any dinner in the evening.

What an abundance!

 

Friday 8th February 2013:-

Breakfast: Museli, pumpkin seeds, rice milk, a sprinkling of dried coconut.  Instant coffee with rice milk.

Mid-morning: A second breakfast of Eat Natural Gluten-Free Toasted Museli with almond milk.  Peppermint Tea.

Water

Lunch: Ready-made sandwich from work canteen (Cranks: Houmous and Vegetables “Suitable for Vegans”!  Thumbs Up Cranks!)  Walker’s Ready Salted crisps

Supper: homemade soup, toast and Marmite

Later in evening: lemon & ginger tea and a small bar of very dark chocolate

Breakfast:  Museli, a kiwi fruit, pumpkin seeds, rice milk, a couple of teaspoons of coconut cream

Mid-morning: A black coffee, banana/oat/date cookie

Lunch: Potato cakes (made with the leftover Colcannon from the weekend and fried up in olive oil and paprika), Mushrooms fried in olive oil and marmite, pickled onions

Water

Snacks during afternoon:  Fruity Tea, A Soya Latte, another banana/oat/date cookie

Dinner: Delicious homemade meal of tomato bruschetta, salad, mushroom and vegetable risotto, followed by a bowl of mixed berries.  Tasted wonderful and was first Vegan meal provided by friends, which made it taste even better.  Thank you! A glass of wine.

Evening: Peppermint Tea

Saturday 2nd February

On waking – tea with almond milk

Breakfast

Museli with almond milk and chopped kiwi fruit

2 slices of toast, one with Marmite and one with p-nut butter

Coffee with almond milk

Snacks

Lemon & Ginger tea

Water

A stick of celery

Quite a few dates

Lunch

Steamed asparagus with non-dairy ‘butter’

Wholegrain basmati rice with spices and chopped tomato

Red grape juice

Dinner

Tamale Pie from the ‘Colour Me Vegan’ cookbook (a bit like a Mexican version of ‘Shepherd’s Pie’, made with beans, sweetcorn and vegetables, topped with polenta)

Colcannon from the ‘Colour Me Vegan’ cookbook (made with potato, curly kale, garlic, onions and non-dairy ‘butter’

Sunday 3rd February

Breakfast

3 slices toast

Baked beans

Fried mushrooms

Grilled tomatoes

Tea with almond milk

Half a red grapefruit with a sprinkling of muscovado sugar

Mid-morning: Black coffee

Lunch

Salad of chopped bell peppers and baby spinach leaves

Carrot batons

Houmous on 2 x medium sized baked potato – skin crisped with olive oil and salt

Supper

Wasn’t very hungry so snacked on pistachios, dried apricots, and ate 2 of the Oat/Banana/Date cookies (recipe from ‘Colour Me Vegan’) that I’d made.

In the evening I drank both fruity and chamomile teas and ate another of the cookies.
