I had a busy weekend and when it’s a choice between actually eating, or writing about eating, well, then it’s kind of obvious really, isn’t it…?

Anyway, here’s the food diary for the past couple of days.  I’ve tried attaching a few photos as well, although I’ve not really got the hang of making food look great.  It all tasted good though.

Saturday 9th February

Breakfast: oatmeal, made up with water and almond milk, a sprinkling of milled linseed and dried blueberries, cinnamon,  fresh kiwi fruit, 2 x cups of tea made with soya milk

During the morning: an apple, a 100g packet of almonds, water, about 10 hazelnuts (motorway driving was driving me crazy – probably the hardest food/mood moment so far)

Lunch: 1 and a half rounds of homemade sandwiches (granary bread with avocado, fresh tomato, lime juice and chilli flakes), a small bar of very dark chocolate (I couldn’t finish the sandwiches as the avocado tasted too rich)

Afternoon: A lot of water. A packet of Walker’s Ready Salted crisps. A pear.

Evening: Baked potatoes, Pure sunflower margarine, baked beans, houmous, salad of lettuce/tomato/celery

Sunday 10th February

Breakfast: 4 slices granary toast with sunflower margarine, baked beans, tea with soya milk, a pear

Mid-morning: a black coffee

Lunch: A lot of celery filled with p-nut butter, half a packet of Walker’s Salt & Vinegar crisps, a lot of orange juice

Mid-afternoon: an instant coffee made with rice milk, 2 x homemade banana/oat/date cookies

Evening: Homemade vegetable chilli made with cauliflower, bell peppers, curly kale, carrot, kidney beans, canned tomatoes, fresh spinach. 2 slices of bread.

Chamomile tea

Breakfast: granola with rice milk, a couple of teaspoons of coconut cream and a sprinkling of pumpkin seeds.  Fruity tea.

Mid-morning: peppermint tea, a handful of mixed nuts and raisins

Lunch: 2 large raw carrots and some chopped raw pepper and about half a tub of houmous, 1 small p-nut butter sandwich, a banana, a coffee with almond milk

Water

Evening: A bowl of homemade soup (the one with parsnips/carrots/chickpeas/coconut from the other day, and a homemade cookie (banana/oat/date).  Chamomile tea.
