I’ve been eating a Vegan diet for 11 weeks now and I’m feeling good.

Here are some pictures of meals I’ve enjoyed recently.

1.  A falafel, mushroom, spinach and houmous burger.

3.  ‘Green Museli’ – I chuck in lots of pumpkin seeds as an extra and add chopped kiwi fruit. This one was served with almond milk.

4. And finally, a luscious lemon cake I made at Easter

I’ve also been enjoying trying out some great bodycare products from ‘Lush’ and am completely bowled over by their shower gel called ‘The Olive Branch’.  It’s wonderful.  Here’s a link:-

Breakfast: 1 slice Biona rye bread, toasted, half a can of baked beans, slices of V-pud, lightly fried in olive oil.  2 mugs of tea with soya milk.

Lunch: Sandwich made from 2 slices Biona rye bread with tangy tomato tofu paste.  A raw carrot.  A salad of chopped lettuce, cucumber, red and yellow peppers, canned sweetcorn, tomatoes.  A packet of Walker’s Ready Salted crisps.  A black coffee.  Some dates and pumpkin seeds.

Dinner: Quinoa ‘risotto’ with onion, leeks, carrot and chestnuts, served with some slices of ‘Tofu Rosso’ (bought from local shop – not bad) and a spoonful of mango chutney.  Herbal tea.

Breakfast: granola with rice milk, a couple of teaspoons of coconut cream and a sprinkling of pumpkin seeds.  Fruity tea.

Mid-morning: peppermint tea, a handful of mixed nuts and raisins

Lunch: 2 large raw carrots and some chopped raw pepper and about half a tub of houmous, 1 small p-nut butter sandwich, a banana, a coffee with almond milk

Water

Evening: A bowl of homemade soup (the one with parsnips/carrots/chickpeas/coconut from the other day, and a homemade cookie (banana/oat/date).  Chamomile tea.
